BLACK TEA
Black tea is what most people think of when the word "tea" is mentioned. Black teas are fully fermented, wirthered (dried) and rolled tea leaves. They have a stronger flavor than either Oolong or Green teas. A natural fermentation process deriving from the release of oxydizing enzymes is encouraged in the freshly picked tea leaves until it is halted by heating (firing), with the dried leaves then sorted and graded for shipping. CEYLON BOP BOP means Broken Orange Pekoe. This tea has good strength, delicate flavor and strong color. It is a versatile tea, good in blends, iced tea, keeps well under heat and appeals to many flavor preferences. Chester Estate. CEYLON OP This has the ultimate distinctive high grown teas flavor, both light and complex. It has long, wiry leaves with a deep orange tip color indicative of carful growing, harvesting and processing. An excellent choice for occasional or new tea drinkers. Kenilworth Estate. CHINA KEEMUN 1st GRADE This is a North China Tea, full bodied and dark red in the cup. Its color and superb bouquet qualify it as the "Burgundy of Teas". There are many grade and price levels of Keemuns; this OP leaf is 1110, one of the best. CHINA KEEMUN HAO YA "B" The Hoa Ya Keemuns are the pinnacle of China Black (Congou) teas. Their flavor is subtly complex, lingering, and mellow. The annual production is only 800 kilos per year of small, early spring flush leaves. CHINA YUNNAN FOP A South China Congou tea that brews up brisk and well rounded in the cup. Yunnans are lighter than Keemuns but vary similary with many quality levels available. The best have large leaves, gold tips and a lightly pungent flavor. INDIA ASSAM FTGFOP This is a zesty, heavy bodied tea, rich in flavor, with a long and tippy (light colored tips) leaf. The best of Assam teas avoid the astringncy of lesser grades, which are used in blends to add substance. Dikom Estate. We base our choice on which has the most robust flavor and dark liquor as well as the distinctive Darjeeling character for each crop year. Teesta Valley Estate. INDIA DARJEELING TGFOP The full romance of its high Himalayan origins give this excellent estate Darjeeling a rich flavor, coppery red color, sweet aroma and distinctive body - a bit heavier than its fancier cousins. Balasun Estate. INDIA DARJEELING FTGFOP This is a tea of prominence with excellent balance and unique astringincy that produces a strong body without heaviness. It is a delicious, brisk tea with long, partially opened leaves. Singbulli Estate. INDIA DARJEELING FTGFOP ORGANIC It is second flush, flavorful and fragrant like the rest of our Darjeelings; its tender second growth leaf tips picked only from May through August. Grown with great care at over 4,000' elevation. Ambootia Estate. KENYA GFBOP A well rounded, dark cupping tea, smooth like its Ceylon counterpart but stronger, with a piquant aroma and a pleasant astringincy unique to East African Teas.
